After my recent appearance (above) on Lance Hedrick’s Youtube channel where we discussed post-harvest processing terminology and the ideas that we attach to the most commonly-used processing descriptions, many commenters were left confused and requested a flowchart or other visual aid.

Processing descriptions can often be confusing, vague or otherwise opaque. Indeed: “washed,” of course, doesn’t always mean the same as “washed,” and “anaerobic” might reference one or two different fermentation stages.
